When you hear the word "fashion" what comes to mind?

For me it's this David Bowie song:

Honestly, I've never been very "fashionable". I like to pretend that I dance to the beat of my own drum but really I just don't know what I'm doing. Sometimes I can "fake" it but most of the time being fashionable is a lot of work for me.

However, since I'm not pregnant and I'm working on losing this baby weight I'm attempting to revamp my wardrobe. Yesterday, I was able to go shopping by myself and as I got in the car I realized I had no idea where to even go to shop for clothes. My autopilot took me to Target where I bought this sweater and then I ended up a Costo (I'm slowly turning into my mom). So after a failed attempt to go shopping I decided to head home a do a little research. I challenged myself to assemble a complete fall/winter outfit (costs not considered). I shopped all over the web at stores familiar and new. Here is what I came up with...

If you're in a fashion rut I challenge you to create your perfect outfit.

I may never be "fashionable" but as long as I'm not wearing Mom Jeans, I think I'm doing OK.

The Shoes I Never Thought I'd Buy

In my dreams I'm a "classy lady", the kind who buys only nice things and gives her friends and family only the finest gifts. In my other dreams I'm the "fun mom", laughing and playing with my kids all the time. In reality I don't think anyone would call me "classy". Classy ladies don't fart right? And I'm not sure the patrons of Target would call me the "fun" mom after toting the 3 year old out of the store kicking and screaming because I wouldn't let him open all the toys in the toy section. (OK I'm exaggerating... a little) 

Because I want to be classy and fun at the same time, last week I found myself at a crossroads over the purchase of a pair of shoes for Jude, the aforementioned 3 year old. You see, small children tend to grow a lot, hence outgrowing their clothes and shoes rather quickly. So as winter approaches I thought Jude might like a pair of shoes that aren't sandals. During an outing to Target we passed through the shoe section just to see what they had to offer. Of course there were plenty of light-up shoes with characters on them, the kind a "classy mom" would never buy. So we tried on a few pair of dressy shoes and boots, none of which Jude particularly cared for. As I stood there staring at the aisle of shoes I realized I'm not a "classy mom" and Jude certainly isn't a "classy kid". Dress shoes? For a 3 year old? What was I thinking? So I backed up and pulled a pair of Toy Story shoes off the shelf and handed them to Jude. Immediately his eyes lit up. "Buzz LightYear Mommy!" Then I handed him a pair of Cars shoes and received an even bigger smile. "Cars Mommy! Lighting McQueen!" Finally, I handed him the Spiderman shoes and he immediately handed me back both of the other shoes and asked to "Put on Spiderman Shoes Mommy! Spiderman!" (His Halloween costume this year is Spiderman!)
As I stood there with my ever so happy 3 year old wearing Spiderman shoes I had a little conversation with myself. (Yes, I talk to myself. Don't pretend like you don't talk to yourself too.) 
Oh man he really loves these Spiderman shoes. He will probably throw a fit if I don't get them. But I promised myself I would never buy my children cheap character shoes. He needs a good pair of shoes. Shoes that will help him run faster and look fancier. But he could wear these Spiderman shoes with his Halloween costume. Maybe they can be a part of his costume. They are just play shoes. Play shoes can be cheap because they are going to get all messed up anyway. Plus, this is my chance to be a "fun" mom. And boy does his really love them. Oh, look they are on sale. Sold!
So I carefully asked him, "Jude, do you want these Spiderman shoes?" and of course he replied, "Yes! My Spiderman shoes!" So I put them in the cart and officially became a "fun" mom. I think "fun mom" is a more realistic title for me than classy mom. Besides, what kid wants a "classy mom"? Everyone wants to have a "fun mom"!

Update on Home Birth Insurance

So yesterday after talking with the nice rep who said she would resubmit our home birth insurance claim a few hours later Joe got a call from her. He was in a meeting so she left him a voice-mail that said our Midwife wasn't certified. So I called her back and said that yes, our midwife was in fact certified. The rep said that Joe's company will pay for CNM, Certified Nurse Midwives. Our Midwife is a CPM, Certified Professional Midwife. I told the rep and she said she would talk with her supervisor and explain that our midwife was certified. 

So now it looks like we may have to talk with the HR people at Joe's work, who specifically told Joe that yes, Midwifery care was covered under our new insurance. It was never specified that only a certain certification was accepted. 

I guess the thing that frustrates me the most is that we did our homework, we asked both parties (HR and Insurance) before Noah was born if we could file a claim and they both said YES! Now, we are getting the run around and jumping through a million hoops to probably be denied.

Alas, I will continued to keep a positive attitude, pursue the reimbursement and be nice to everyone. (That last part is going to be the hardest)

Getting Insurance to Pay for a Home Birth

We had both of our boys at home with a Midwife. With Jude we didn't even bother filing with insurance because we didn't realize that was an option. We just paid the $3000 out of pocket and moved on. With Noah we decide to check all of our options and see what was covered under insurance. Joe's work had pretty decent insurance at the time so I called and talked to a representative about our options and they said a midwife would be covered. So we went ahead with our plan to have another home birth with mid-wife.

However, mid-pregnancy Joe's work underwent some changes and ended up switching insurance providers which have been super difficult to work with on all levels. We had to pay our midwife the total cost of her services upfront, $4000 so we figured we could submit a claim to our provider for reimbursement.  (Home births are significantly less expensive than hospital births so you would think they would love to pay out for home births since it's saving them money.) I had Noah mid June and we are still going around and around with them about reimbursement.

Most medical insurance has no idea how to handle such a situation so I've had to call and explain stuff and get my midwife to submit all of my medical records. Also, because I'm Rh- I needed a RhoGam shot after Noah's birth which was another $151 out of our pocket. So we included the receipt for the shot with our birth claim. Well yesterday we received a check for $60 as a pay out for the Rhogam shot. They said the $4000 claim for the birth was from an "Ineligible Provider".

So I called today and talking to a very nice representative that said she was going to resubmit our claim because midwifery IS covered under our policy. So we play the waiting game again. I highly doubt it will be a simple yes they give us. But I plan on pursuing them until they finally cave and give us some sort of reimbursement. I'm not expecting 100% returned but I do think having a baby should be covered under medical insurance.

Slow Cooker Thai BBQ Rack of Pork #CostcoPork

Joe LOVES Thai food and I LOVE my slow cooker so we combined our favorites and created this delicious Thai BBQ Rack of Pork recipe. Thai BBQ Rack of Pork is show stopping meal and is perfect to serve at a dinner party. It tastes amazing and looks way more difficult than it is to actually make.
This a very simple recipe and doesn't require much work from the cook but it is a time intensive meal due to the marinate and cook times. But trust me, it's definitely worth it!

Prep Time: 10-15 min
Marinade Time: 12 - 24 hours
Cook Time: 8 hours
Marinade Ingredients
Rack of Pork 
1 can (12 fl oz) Pineapple Orange Frozen Juice Concentrate
1/2 cup - Peanut Butter (we used creamy but crunchy will also work)
1/4 cup - Ginger Dressing (we used Tonton Ginger Dressing available at Costco)
1/2 cup - Soy Sauce
1/4 cup - Honey
2-3 cloves pressed Garlic

Ingredients for slow cooker
1/2 cup - Tonton ginger dressing
2 cups - chopped Mild Sweet Peppers
1/4 cup - Tonton Ginger Dressing
Scallions to garnish

Marinade Directions:
Mix all marinade ingredients in blender, except the Pork, until smooth.
Pour marinade over the rack of pork and refrigerate for at least 12 hours. (24 hours is ideal but 12 is fine. We place ours in a large plastic zipper bag.)
Cooking Directions:
Remove rack of pork from marinade and place in slow cooker
Discard marinade
Add 1/2 cup of Ginger Dressing atop the pork 
Cook on Low for 8 hours
When there are about 2 hours left on the slow cooker cut sweet peppers and mix with 1/4 cup Dressing
Add pepper and dressing mix to the slow cooker
Once the pork is done remove it from the slow cooker along with all of the cooked peppers.
Top with chopped scallions
The pork should just fall away from the bone, it's wonderful. Both Joe and I were delighted with how this recipe turned out, even Jude (our three year old) loved it. We served the pork with white rice and a simple salad topped with the same Tonton Ginger Dressing. We will certainly be making this dish again!
Almost all of the ingredients can be found at Costco (except the scallions). The Thai BBQ Rack of Pork is not only delicious it looks pretty impressive too. Dinner guests will think you slaved over the stove creating such a beautiful and succulent dish. Because you are cooking the main dish in a slow cooker it affords you more time to prep for other dinner party details like perfecting your Thai Iced Tea recipe or arranging a beautiful centerpiece. If you're looking to impress guests with minimal effort I would highly recommend Thai BBQ Rack of Pork.

Temperature Tip 
In May, the USDA reduced the temperature guideline for pork loins, chops and roasts from 160 to 145 degrees F, with a three-minute rest. This will yield a juicy, flavorful product that may be pinker in color than most home cooks are used to. Ground pork, like all ground meat, should be cooked to 160 degrees.

The Liebs go to the NC State Fair

Yesterday, Joe took a half day and we went to the NC State Fair. Joe and I have gone to the fair every year we've been together. Ironically neither of us enjoy large crowds but somehow each year we procure free tickets and end up going anyway. However, we always have a great time and power through our distaste for large groups of people to eat some yummy food.

This year I won tickets from the NC State Fair Blog, Deep Fried, because they choose my press challenge, to turn clay at the Village of Yesteryear. (I dedicate that challenge to my friend Paige from Love Sown who is an excellent potter - the only potter I know for that matter) I actually won tickets last year the same way by suggesting they milk a cow.

Joe loves the fair primarily for the food. (OK, I think most people like the fair primarily for the food)
He likes it so much he even made a list of foods he wanted to eat while at the fair.

Here is his list:

boiled peanuts

Wisconsin cheese

Here is what we actually ate:

Jude also ate some chicken tenders and a NC State Chocolate Milk.

We didn't ride any rides but we did see a few exhibits, animals and let Jude play at the UNC-TV Kids Tent.

It was a fun easy going day with perfect weather.

Southern Fried Shrimp Recipe {Guest Post}

Guest Post: Today's Guest Post is from my college friend Jessica Ambrose. We became fast friends because we had the same name and are from the same state, NC! Jessica is the founder of The Redheaded Princess where she shares her delicious recipes with step-by-step instruction and fun craft tutorials. Today she's sharing a yummy Southern Friend Shrimp recipe which makes me long for the ocean.

Southern Fried Shrimp

Okay, so in case you didn’t know it, I grew up on the Outer Banks of North Carolina, a small southern area right next to the ocean. My Pop Pop was a fishermen and a couple of my uncles were too. So naturally, we had our abundance of fresh seafood. I was definitely spoiled when it came to that area. I remember my Pop Pop had a shrimpin' boat by his house (which was right on the water). For a time, my sister and I stayed with them and one evening during our stay he and my Grandma Emma took us out for about a twenty minutes. I don’t remember how long it really was, I was 11 and it wasn’t a very long time…we were hungry ☺ When we came back, Grandma made us some (for real) fresh shrimp. Talk about delicious! I loved her seafood, though she wasn't a southerner (she was from Canada) she cooked some amazing things (some not so amazing...that story for another day:) ) Well, I wish I would've gotten her recipe before she passed but I was a young newlywed and didn't think of it. So for a few years, I tried different recipes for Fried Shrimp and I was usually disappointed. The reason being that the recipes I tried were either too thick and took forever to cook making the shrimp taste rubbery and overcooked since they were made with egg and egg batters take longer to be fully cooked. OR the batter wouldn't stick and ended up falling off the shrimp. Consequently, I had quite a few failures UNTIL, I found THIS recipe from one of my favorites, Paula Deen. It’s such a great recipe! The breading is light and flaky and has just the right amount of flavor. The only thing different is that I just use vegetable oil or canola oil for frying and I cut down the pepper. My girls liked it, except they kept saying that their mouths were burning. Needless to say, they drank ALL of their milk that night and then some, LOL. Well, I hope you enjoy this recipe and though I cannot take all the credit, it has become a staple in my Recipe Book. Enjoy!

Ingredients
1 cup milk
1 cup buttermilk
1 cup hot sauce
2 cups self-rising flour IMG(SFS2)Small
1/4 cup self-rising cornmeal
1 tablespoons coarse ground black pepper
3 tablespoons salt
2 pounds medium shrimp, peeled and deveined
Canola or vegetable oil, for frying

Directions
Preheat oil to 375 degrees F. I actually used a thermometer this time, because my oil was way too preheated and I ended up burning some of the shrimp. I'll show you later...

Next, I peeled the shrimp (tail and all) because it's easier with kids and my DH to just have them already peeled so when it's time to eat, Mommy can enjoy her dinner in peace... :) I drained them then laid them out on a paper towel and patted dry.


Line a baking tray with paper towels and set aside. In a shallow baking dish, whisk together milk, buttermilk and Texas Pete. Tip* If you don't have buttermilk, then pour a cup of milk in a measuring cup, then add a tablespoon of vinegar and let sit for 5 minutes. I prefer to use the real thing, so I usually have it in my fridge, but if I forget, I've used this and it worked fine.


In a separate shallow baking dish, whisk together flour, cornmeal, pepper and salt. Make sure your shrimp are dry and dredge in the dry mixture first,




Then dip them in the wet mixture and finally the dry mixture again. Shake off excess between each dredging.
Deep-fry in batches, but do not overload the fryer. Fry for 2 minutes or until golden brown. Remove from oil with a slotted spoon and drain on the paper towel lined baking tray. So as I mentioned earlier, my oil was too hot. Here's what happened to my shrimp :( BUT, thermometer to the rescue! I lowered the heat, inserted the thermometer and just waited till the temperature got back to 275 degrees Fahrenheit. Then it only takes 2 minutes. I actually love to make shrimp on a weeknight because it's such a quick cooking meal. I will usually have some broccoli steaming as I'm prepping and cooking and I fry up some hushpuppies in the same oil as the shrimp. 

Also, serve with some homemade cocktail sauce. Just mix ketchup with a little bit of horseradish and a splash of lemon juice and Voila! Delicious cocktail sauce!

Get Organized with Rubbermaid Bento {Giveaway}

Our home office is a work in progress. Joe has his work area and I have mine but last week I finally rearranged the space so that Jude can have his own area. Now that we are doing more learning and art projects at home I need a dedicated space for all of his art supplies.

Noah Asher - Month Four

This boy is 4 months old now.
I am absolutely in love with him.
He has the sweetest disposition and I love watching his personality take shape. 
He will stare me down until I look at him and then he flashes me the biggest goofy smile you've ever seen. I LOVE IT!
I'm not sure of his current stats (guess I should plan his next check up soon)
I'm guessing he's close to 20lbs - he's a chunk
He wears mostly 6-12 mo clothes erring on the side of 9mo
He has long mastered rolling from back to tummy and can, on occasion, roll back.
He longs to sit up but doesn't have the balance yet.
He discovered his feet
He also reaches for everything, especially my food.
He thinks everything Jude does is hilarious and in turn Jude does anything he can to make Noah laugh. (I foresee a lot of goofiness from these boys)
He loves to nurse and almost every time I feed him I think back to those first few weeks when his tongue-tie prevented him from nursing. I am so proud that we both persevered through that rough patch and now have an awesome breastfeeding relationship. (I have no plans to stop breastfeeding anytime soon.)
Mid-Photo Shoot he decided it would be better if he was lying on his tummy.
The he decided he was wrong about that decision and back was better.

Noah is just all-around awesomeness.
