Roasted Red Pepper Hummus

This is my first time ever making hummus. I've often thought about making it. I mean it looks pretty simple and it actually is pretty simple.

Ingredients
1 (16 oz.) can of Garbonzo beans
1/3 cup tahini
1/3 cup lemon juice
1/3 cup chopped roasted red pepper
salt and pepper

1. Mix the Garbonzo beans, tahini and lemon juice in your food processor. (If it gets a little think add a bit more lemon juice)
2. Add salt and pepper to taste.
3. Mix in Roasted Red Pepper

EAT!

I love making my own hummus. I can make it just the way I like it... not too thin, not too thick. A little more lemony and lots of red pepper!

Roasted Red Pepper and Pasta

Day 2 of Roasted Red Pepper eating. So I didn't get super creative with our dinner on Tuesday night. I simply incorporated our Roasted Red Pepper into a typical pasta meal.

Ingredients
Rigatoni
Vodka Sauce
Roasted Red Pepper
Left Over Chicken

Cook the pasta
Add the chopped red pepper to the pasta sauce
and heat up the chicken.

Viola, dinner!

Roasted Red Pepper and White Bean Crostini

Now that I have a ton of roasted red pepper that I've been incorporating into every dish I cook! I first started with Roasted Red Pepper and White Bean Crostini.



Ingredients
  • 1  baguette, cut into 1-inch-thick slices
  • 2  tablespoons  extra-virgin olive oil
  • 2  garlic cloves, minced
  • 1  (16-ounce) can white beans, rinsed and drained
  • 1/4  cup  chopped bottled roasted red bell pepper
  • salt and pepper
1. Preheat oven to 350°. Place baguette slices on baking sheet, and brush with 1 tablespoon of oil. Bake 10 minutes or until toasted.

2. While the bread is in the oven, add 1 tablespoon of oil in a medium skillet over medium heat. Add garlic; cook about 2 minutes. Add beans, and cook 2 minutes to warm. Add salt and pepper. Mash about half the beans with a large fork.

3. Add chopped roasted red bell pepper to bean mixture. Allow to warm through, and remove from heat. Top bread evenly with bean mixture. And Eat!

How to Roast a Red Pepper

I don't claim to be a great cook. I do often experiment and try new things, most often they don't turn out so great. But occasionally I'll get lucky and create sometime delicious. The other day Harris Teeter had a bag of 4 Red Peppers marked down on clearance, $2 total! They like to mark down produce because they aren't super pretty but they still taste the same. So I bought them not really know how I would use them.

I decided to roast them. I've never roasted red peppers but it's super simple. The internet told me how. Now I'm going to tell you.


1. Turn on your broiler
2. Wash your red pepper
3. Place whole red pepper on the top rack of your oven.
4. Watch as the top of the red pepper turns black (may take a couple minutes.)
5. Turn Red Pepper and watch the next side turn black.
6. Continue turning until all of the pepper is black.
7. Remove pepper from oven and wrap in aluminum foil.
8. Let pepper sit for 15 minutes. It will continue to cook .
9. Remove stem and seed.
10. Remove skin. Should be pretty easy to peel away.
11. Cut into strips as thin as you like.
12. Eat or store in your fridge.

A great Saturday with my family

This past week we all suffered from a nasty Stomach bug. But fortunately we were all healthy and ready for a fun and beautiful weekend. On Saturday morning we had the pleasure of having breakfast with the Easter Bunny. It was a nice little get away in the morning and Jude had a great time meeting the Easter Bunny.


Later that afternoon we ran some errands and the took a nice long walk to our favorite coffee shop. We haven't done that in a long time and it's one of our favorite relaxing afternoon activities. Jude played tic-tac-toe and chess.

Carolina Inn Breakfast with the Easter Bunny


Saturday morning we had the pleasure of having breakfast with the Easter Bunny at The Carolina Inn
Having never been to the Carolina Inn we were captivated by the beautiful building and grounds, complete with southern charm. The breakfast buffet was filled with delicious food like scrambled eggs and chives, cheesy grits, apple wood bacon, pancakes, fresh fruit and much more. They even had a pint size buffet so the children could serve themselves. There were coloring sheets and crayons for the kids and even face painting. The Easter Bunny was great. He handed out Easter Eggs to all of the kids, took lots of pictures and gave Jude a lot of high fives!

How old is your blog or long have you been blogging? 
I have been blogging on my family blog since Oct. 2007.  This actual blog was started in January of 09.

What made you choose the name of your blog? 
When I started a little over a year ago, my blog was titled, “Rants, Raves, and Pet Peeves”  however for 2010 and on…I decided I wanted to Enjoy Life, and Enjoy Now more—so I brought it to my blog.

Why do you blog and what do you love about blogging?  
I blog for fun!! I always say it is an outlet to my madness.  I love doing it for ME and my spare time.  I just recently started reviews and giveaways and am really looking forward to doing more of that.

What are a few of your favorite posts on your blog?  
This question made me realize I don’t write anything very insightful—very often.  Here are a few posts from a meme I participate in called, “Motivating Mondays”, I promise to write more just to write.

Are you married?  If so, how long? 
Yes I am married.  My hubby and I will celebrate 8 yrs in June.

Do you have children?  If so, how many? 
I have 2 beautiful daughters: Kendall 6, and Peyton 3

What is your favorite movie? 
I watch A LOT of movies.  I don’t know how to pick just one.  I love Sleepless in Seattle, You’ve Got Mail, Hope Floats, Serendipity, classic romance, chick flicks

I like Ryan Reynolds, Will Ferrell, Vince Vaughan, Hugh Jackman (another great movie Wolverine, Kate and Leopold),  Reese Witherspoon, Sandra Bullock….list goes on.

What is your favorite band or musician? 
Daughtry,Rascal Flatts, Carrie Underwood, Taylor Swift, Matthew Nathanson, and pretty much whatever my hubby listens to.  I really don’t know who sings a lot of the songs I like

What is your favorite food? 
There really isn’t much I won’t eat, but I really like Mexican food and Chinese food.

What is your favorite candy? 
Sour Patch Kids, Hot Tamales, Starbursts.  Love chewy, sour, and sweet, over chocolate.

What else should readers know about you? 
I am a simple person.  I am easily entertained and easily pleased.  I try to be HAPPY all the time, and if I get in a FUNK—I try to quickly get myself out of it.  I love kids—especially my own.  I have a passion for baking and cooking and would love to go to culinary school or to be a pastry chef.  I love to READ and will stay up into all hours of the morning to finish a GOOD book.

SmartMom Solutions Roadshow with Maria Bailey


A few weeks ago I had the pleasure of attending the 1st SmartMom Solutions Roadshow in Cary, NC. Andrea (lil-kid-things) and I went together and we had a great time. We didn't know anyone else there but it was great to meet some local moms and bloggers.

B Clean Guest Post: The Linen Closet

When Jessica asked me to do a post for The B Keeps Us Honest Spring Cleaning event, I knew exactly what it would be. My linen closet was in a sad state of affairs and has been for some time. I knew it needed an overhaul, especially with a toddler running around. We, like many people kept our cleaning supplies on the floor. Obviously that would no longer work. I also had a baby bathtub that is no longer needed as well as miscellaneous paper products that never really found a home.

Thankfully, I had established a system years ago that just needed some fine tuning, so I got to work. It's no surprise that containers do wonders for storage aesthetics. I find this to be particularly true for small spaces such as a linen closet. I moved the cleaning supplies to the second shelf and they are contained so if needed, they could go all the way to the top. I re-purposed some wire cubes to store the toiletries and refolded our linens. I also spent some time going through old medications and lotions (yes they expire too!) and got rid of all the excess. Sometimes it's hard to let those things go. But in my opinion, the freedom is FAR better than the chance that you would have and remember having some obscure item for 5 years "just in case".

Alvin and the Chipmunks The Squeakquel Movie Soundtrack Review

We love music in our house. Jude loves to dance and sing along with pretty much anything. So I was very excited to review the Alvin and the Chipmunks The Squeakquel Movie Soundtrack. Although we haven't seen the movie yet, it's in our queue, Jude loved the music. We danced around the living room singing along to the songs. The best thing about this soundtrack is you are probably familiar with a lot of the song already. Our favorite song was Single Ladies by The Chipettes. 
Even if you haven't seen the movie yet you will love this soundtrack and more importantly your kids will love it!

B Clean Guest Post: 10 Second Tidy

A smiling a happy Mom casually sweeps up dirt into her neat little dustpan. She pauses and smiles, gazing out the window at the glorious day, relishing the singing of the birds. She deeply breathes in the sweet clean air in as she surveys her spotless kingdom….
(Insert sound of scratching record here)

Riiiighhht….. Ok ladies. Here’s the real world. Your feet hit the floor running every morning and don’t stop until you fall into bed at night. Your house looks like wolves live there and you live out of the laundry basket and the dish drainer. Clean the oven? Yeah whatever. The next oven I’m gonna buy is one that flushes.

The reality is, as moms we are pulled in so many different directions these days. Life moves quickly, schedules are packed, and sometimes our cleaning routines suffer.

BUT....don’t despair. Molly and The Big Comfy Couch to the rescue! Huh? Whatchu say? Well, let me explain. My 4 year old is a hardcore fan of Molly and The Big Comfy Couch. Why a child who sleeps in her princess gear would be interested in a show from the 80’s is beyond me, but I will say I have pulled one useful concept from this quirky little show. It’s the Ten Second Tidy. Long story short the main character Loonette the Clown tends to make a mess throughout the course of the show. The crap/toys she pulls out of her Big Comfy Couch is mind-boggling. And the fact it all goes back in the couch is even more perplexing. But the bottom line is, she takes “10 seconds” and tidies up her surrounding area.

The same concept can be used in our homes and routines. Although we can’t speed up time (thanks to movie magic) and make the mess disappear in 10 seconds, we can pick one area a day and spend 15 minutes doing some damage control. Pick a “zone” so to speak. Your zone for the day could be the bathroom, the laundry room, or even the kitchen. Just pick a zone and git ‘er done! A little bit a day is better than trying to tackle Mount St.Tons-o-Crud at the end of the week.

Here’s another suggestion. As you clean and declutter, determine which items need a “path” and which need a “home”. Items that need a “home” could be coats that need to be hung up, shoes that could be put away in closets, & toys into the toy box.

An item that needs a “path” could be the broken toy that needs to go to Daddy’s workshop to be fixed, the shirt that needs to be sent to the ironing board, or the junk that needs a “path” to the dumpster! If you process your clutter with this in mind, the end result will be more satisfying than moving your piles from room to room.

Oh, and here’s one more thought/idea on items that need a “path”:

TRASH CANS AND SHREDDERS ARE YOUR FRIENDS--Are you being buried under a landslide of excess paperwork? Are you snowed under in the middle of July? Paper is one of the largest contributors to home/office clutter. Studies have shown most people are keepers. They keep every scrap of information, flyers, mail, and advertisements “just in case.” In those cases, 80 percent of what you keep, you will never need again, and even if you do, it could be recreated or obtained from another source. Remember, your trash can and shredder are your friends.

So Mommy’s rally your troops, form a game plan, and attack that clutter! But don’t expect miracles the first day. Like anything a cleaning plan needs proper care and feeding, and a little help from the whole family. I have a friend that plots her “zones” on calendar. Monday=kitchen, Tuesday=bathroom, and so on. I think it’s always best to have your cleaning routine in some sort of written form. It’s hard to stick with an plan if you don’t have a road map to guide you.

I’d like to leave you with one last thought. Please, please don’t obsess about the perfection of your home. At the end of the day, if you gave it your best shot and took care of your family, THAT is what counts. I always say, “if you come to my house and it’s a mess…that just means I play with my kids.” ☺

How old is your blog or long have you been blogging? 
I started actively blogging in December 2008.

What made you choose the name of your blog?  
I wanted something catchy and that reflected me. Honestly, I really didn't give it too much thought. I just choose Simply Stacie and went with it!

Why do you blog and what do you love about blogging? 
I love what I do. I still always get excited when I get a delivery or pick up the mail and there is a parcel for me. I love trying new products that I may not ever have had the chance to try out. I also love connecting with people- other bloggers and my readers. They are the best!!

What are a few of your favorite posts on your blog? 
I do many reviews and giveaways so it would be too hard to choose my favourite. I have recently written a few posts to help out other bloggers and have received positive feedback. Here's a few links:

Are you married?  If so, how long? 
I have a boyfriend and our relationship is great! I am really happy.

Do you have children?  If so, how many?  
Yes, I do. I have two beautiful girls. Olivia is 11 and Bridget is 5.

What is your favorite movie? 
I love all the John Hughes movies from the 80s. My favourite is Pretty in Pink. I love Molly Ringwald!

Who is your favorite actor?  
I love Adam Sandler. His movies always crack me up!

What is your favorite band or musician? 
I love many different types of music so this one is hard. I am going to say that one of my favourites is Nickelback- a Canadian band!

What is your favorite food?  
Mmmmm...tough one. I am going to have to go with steak.

What is your favorite candy?  
Werther's Originals. I can never stop with just one.
